Easy Summer Potato Salad
Ingredients
- 1.5lb package of fingerling potatoes, halved
- 1 bundle of asparagus, trimmed, cut into 1-1/2 inch segments
- 1 16 oz. jar of 505 Southwestern®️ Tomatillo Garlic & Lime Salsa (may substitute 505 Southwestern®️️️ Salsa Verde)
- Chopped cilantro and crumbled cotija cheese for garnish (optional)

This summer potato salad is about as easy as it gets! Forget all the chopping, mashing, and seasoning and let our Tomatillo Garlic & Lime Salsa add delicious bold flavor with minimal effort.
- Preheat grill to medium-high heat or oven to 400 degrees
- Add asparagus and fingerling potatoes to a cast iron skillet and toss with a drizzle of olive oil
- Put skillet on grill or into oven and cook for about 25 minutes, or until potatoes are tender (be careful of the hot handle when removing from grill/oven!)
- Top with 505SW™️️️ Tomatillo Garlic & Lime Salsa and mix to combine
- Top with cilantro and cotija cheese and serve
