Bacon Wrapped Green Chile Meatloaf With a Honey Chile Glaze
Ingredients
For the Meatloaf
- 1 lbs ground beef
- 2 cups 505 Southwestern® Flame Roasted Green Chile
- 1 red onion, peeled and diced
- 2 packages sliced bacon
- 2 cups 505 Southwestern® Honey Chipotle Green Chile Salsa
- ½ cup breadcrumbs
- 1 egg

- 1 cup ketchup
Instructions
For the Ketchup
In a blender, blend all ingredients until smooth.
For the Meatloaf
On a baking sheet, lay the slices of bacon flat. In a blender, blend the 505SW™ Honey Chipotle Green Chile Salsa until smooth and brush over all of the bacon. In a large mixing bowl, mix the beef, 505SW™ Flame Roasted Green Chile, onion, breadcrumbs and egg until fully incorporated. Form the mixture into a loaf and place in the middle of the sliced bacon. Wrap the loaf in the bacon and bake in a 350 degree oven for approximately 45 minutes. Let cool for ten minutes. Slice and serve warm with the ketchup on the side.
